Fermentation Type:
Lacto-fermented process. Cherries undergo controlled lactic fermentation to develop a creamy texture and delicate acidity, enhancing sweetness and balance while maintaining clarity. This is done by the introduction of Yogurt in an air concealed tank.
Drying Method:
Slow-dried on raised beds under shade to preserve uniformity and prevent over-fermentation.
Water Use:
Efficient washing process with careful water recirculation to minimise waste.

Purchase Model:
Direct trade. The coffee is depulped, fermented, and dried on the farm by Elkin Arcila and his team in Támesis. Lozana Organics purchases the parchment coffee directly, performs de-parching and quality control in Guatapé, and consolidates the lot for export. From there, it is transported by truck to the port of Cartagena, shipped to the Port of Felixstowe (Suffolk, UK), and then stored near Heathrow or delivered directly to the roastery.
This transparent model guarantees full traceability from farm to cup, maintaining quality control and ethical integrity at every step.

Elkin Arcila’s journey into coffee began unexpectedly. With a background in the beverage and water industry, Elkin moved closer to town to care for a family member requiring regular medical checkups — and discovered land with the perfect climate for coffee cultivation.
Since planting his first trees seven years ago, he has become a key innovator in Támesis, founding the region’s first specialty coffee association and a barista school for children, which he personally leads on weekends.
At Medio Mundo, morning mists rise gently from the Cartama Valley, blanketing the farm in cool condensation that defines its unique terroir. Elkin’s dedication and curiosity shine through each cup — expressive, balanced, and crafted with both science and soul.
