Processing Details

Traditional washed, thorough rinsing and slow drying under shade or on patios.

Drying Method:
Sun-dried for 8–15 days depending on local conditions.

Carefully managed community water systems to reduce waste and maintain clean post-wash runoff.

Traceability & Transparency

Purchase Model:
Direct trade through a local producer association. Lozana Organics purchases parchment coffee directly from the farmers’ collective, manages de-parching, lot standardisation and consolidation of the coffee at our Guatapé headquarters. It is then transported to Cartagena, shipped to the Port of Felixstowe (Suffolk, UK), and stored near Heathrow or shipped directly to the roastery.

The Cabresto program includes pre-harvest pricing agreements, ensuring farmers receive fair and predictable pay regardless of C-market fluctuations.

This model embodies transparency, stability, and shared growth.

Origin Story

The Cabresto project was born in the hills of Andes, Antioquia, where a small group of young farmers decided to pool their harvests to create a reliable, traceable lot that represents the best of their region. Grown between 1,700 and 1,900 meters, their farms sit on fertile slopes overlooking the valleys of southwestern Antioquia — a landscape defined by misty mornings, volcanic soils, and a deep coffee tradition.

Beyond cup quality, Cabresto stands for community and resilience. Through Lozana Organics’ partnership, the project offers farmers stability, access to better markets, and recognition for their craftsmanship. The result is a coffee that embodies the soul of Colombia’s Andes: clean, honest, and timelessly sweet.
